OK, I’ll be honest. We feasted on sweets (so many sweets) and heavy comfort foods over the holidays, and my body is basically begging for veggies at this point.

So I’ve put together a list of our favorite Instant Pot recipes to help me make “healthier” choices this week. These are our favorite vegetable recipes to make in the Instant Pot.

Why do some of the recipes include more than just veggies?

Honestly, I just wanted to add more veggies to my diet, so I chose some of our family’s favorite vegetable recipes. Some feature veggies as the main ingredient, while others just benefit from having vegetables added in.

Are potatoes actually vegetables?

Well, technically potatoes are vegetables. And it turns out that they have a decent amount of nutritional value when they’re not cooked up as french fries. So I kept them on the list.

Are squash vegetables?

Apparently, they’re not?! It turns out that squash are actually fruits.

However, I decided to keep them in this list because my kids all call them vegetables, and I still think of them as vegetables. (I guess since they’re savory?) Plus, they’re still healthy so I wanted to add them.
